Sugarcoated Cranberries

Ingredients:

1 bag of cranberries

Orange and/or cranberry juice

Sprite

powdered sugar

Step 1

Add all the cranberries into a bowl, along with the juice and Sprite. You can add however much of the juice and Sprite you like, depending on the amount of flavor you want from it. Leave the cranberries in the fridge overnight to soak.

Step 2 

(Before you do this step, preheat the oven to 250º in preparation for the final step!) After the cranberries have soaked overnight, drain the juice and soda out of the bowl. Add powdered sugar and shake to mix with the berries, adding more as necessary to make sure all the berries are covered.

Step 3

Place berries onto a baking sheet and bake for 2-3 minutes, depending on how crunchy you want the final product to be.

Cream Cheese Mashed Potatoes

(recipe by Martha Kostyra)

Ingredients:

3.5 pounds. Yukon Gold or white potatoes

salt and pepper

8 ounces. softened cream cheese

1 stick unsalted butter at room temperature

¼ cup warmed milk

½ cup warmed heavy cream

Step 1

Simmer potatoes and one tablespoon of salt for around 35 minutes, or until they are tender. Do this with the pot partially covered. Let potatoes cool and dry before doing the next step.

Step 2

Peel the potatoes and cut into large chunks.

Step 3

Mix potatoes, cream cheese, butter, milk, and ¼ of your ½ cup of heavy cream until you reach your desired consistency. If you’re using a mixer, use the low speed setting to avoid overmixing. Add salt and pepper once fully mixed.

Step 4

Put potatoes back onto the stove over medium heat and add the remaining heavy cream. Stir until they have heated through, and serve immediately, unless you are preparing them ahead of time- in this case, store in the fridge and then reheat over simmering water.

Apple Crunch Pie

Filling Ingredients:

6 cups sliced and peeled apples

½ cup sugar

2 tablespoons flour

3 tablespoons water

1 tablespoons lemon juice

Topping Ingredients

1 cup oatmeal

½ cup sugar

½ cup flour

2 teaspoons cinnamon

1 teaspoon nutmeg

⅔ cup soft butter

Step 1

Preheat the oven to 375º and prepare your crust. This pie doesn’t need a specific crust, so any homemade or store bought will do.

Step 2

Mix together all the filling ingredients in a large bowl. Cover the bowl and microwave filling for seven minutes. Once they’re done, fill the crust.

Step 3

Mix all dry topping ingredients in a small bowl before you add the butter. Once the butter has been added, continue mixing until the topping is crumbly.

Step 4

Sprinkle topping over the filling and bake for 35-40 minutes.
